Leftover Mashed Potato Quiche Recipe Ingredients: • 2 cups leftover mashed potatoes • 3–4 large eggs • ½ cup cream or milk • 1 handful shredded cheese • A big handful of herbs (parsley, chives, dill, etc.) • Optional add-ins: cooked veggies, ham, bacon, spinach, mushrooms, onions • 2 tsp Salt & pepper/garlic powder/oregano • Cooking spray Instructions: 1. Make the crust: Spray a pie dish with cooking spray. Press in the leftover mashed potatoes to form an even crust. Bake at 425°F for 20 minutes until crisp. 2. Make the filling: Whisk together the eggs, cream/milk, cheese, herbs, and any fillings you love. Season with salt & pepper/garlic powder/oregano. 3. Assemble: Pour the mixture into the crispy potato crust. 4. Bake: Cook at 400°F for about 35 minutes or until the center is set. 5.
